Pea and Basil Soup

Short and easy post today. Made a simple pea and basil soup for dinner. (Although I'm not personally a fan of cooking with mint, you could pair the peas with mint to make the soup instead. Pretty classic combination.)




Peas, vegetable broth, carrot, mushroom, garlic, basil, parsley, salt & pepper.

Sugar Cookies

Sugar cookies for dessert.




I colored some pink sugar and sprinkled it on top to make them prettier.

Tortilla Wrap With Fresh Tomatillo Salsa

Tonight for dinner, I decided to try a fresh tomatillo salsa. I served it with a simple flour tortilla wrap (I filled it with fake chicken from Morning Star) and made grilled seasoned potatoes to round out the meal.

Fresh Tomatillo Salsa
Ingredients

1 pound of tomatillos
1 clove of garlic (you can use more if you like a lot of garlic.)
Salt, pepper, and cilantro to taste. (I tend to add a lot of cilantro, but some people find it a bit strong.)
1/4 to 1/2 of the juice from a lime
A few dashes of hot sauce
I added a pinch of sugar just to help balance the flavors, but this is optional.
**You can also add a diced onion. Most people do when making salsa, but Laura and I don't like onions.

Directions
1.After removing the husks and rinsing the tomatillos, dry and quarter them. Place them on a baking sheet and broil them for a few minutes. (Allow them to become a bit charred.)

2.Remove from broiler and combine all the ingredients into a food processor and blend until desired consistency.


Pizza!

Today for lunch we made a pizza with a homemade crust and marinara sauce. We topped it with mushroom, kale, and just a tiny bit of cheese (can easily be substituted with a vegan friendly "cheese")

Gnocchi with a browned butter cinnamon sauce with kale

So, today I decided to make some gnocchi. This was only the second time I've done it and they turned out better than the first attempt. I still need to watch a youtube video or something to figure out how in the fuck I'm supposed to make the little indentations the traditional way. Today I just opted for pressing down on them with a fork. haha Oh well. At least I got some type of ridges.

(No) Chicken Noodle Soup

This is a perfect soup for when you're not feeling well, or when it's cold outside. But then again, I enjoy this soup any time of the year.

Grilled Tofu and Homemade Cake

Looks like this will be the very first post in Ate The Plate! Jennifer and I are really excited about this food blog. I seriously spend hours looking at different food photo blogs on the internet and there are so many good ones! It's kind of intimidating! haha. Anyway, on to some food photos from the past few days.


Grilled tofu with coconut cilantro rice on a bed of bok choy... all drizzled with mint oil.




We also made homemade cake with fresh whipped cream and berries. It turned out really moist.




More grilled tofu but this time served with a pear maple glaze on top, grilled corn, and grilled bread with herbed butter.
